Easy, Healthy Granola

We found ourselves with an over abundance of oats and a lack of cereal. We are big granola fans around here so I decided to try making our own easy, healthy granola from scratch.

Woodstock – Birthplace of Granola

Now this may or may not be true, but it is said that granola became popular because of Woodstock. The festival had around 500,000 people in attendance and food ended up being hard to come by. There was a group called the Hog Farm that had been hired to help with food and general festival management. They were basically a hippie commune and granola was a staple food for them. Volunteers were able to whip up granola en masse. Thousands and thousands of attendees had Dixie cups full of granola for breakfast. So the story goes, that is where the true love affair between hippie types and granola began. So much so that a way to descibe someone as being a hippie is to say they are “crunchy”, as in crunchy granola.

No longer reserved only for hippies these days, just about everyone enjoys an easy, healthy, granola.

Easy Healthy Granola Substitutions

This recipe we whipped up using what we had in the house. The base for this recipe is oats, oil, and a nut. Oats are pretty much the only thing that you don’t want to substitute. Otherwise, play around with this recipe and try different variations. Don’t have almonds but you’ve got a pile of pecans? Swap ’em out! Low on maple syrup but have extra honey? Use it up! If you don’t have coconut oil you can trade that out for olive oil.

There really aren’t any hard and fast rules. You can experiment with whatever you have in your kitchen or what might be on sale at the store.

About this Recipe

This is made to be an easy, quick recipe. You’ll get a fairly loose granola that doesn’t have any clumps. If you like a lumpier granola and have a little more time, you can whip eggs whites and toss your mix in it prior to baking, then keep stirring to a minimum.

Easy Healthy Granola

A quick and easy granola for your family.
Prep Time 10 minutes
Cook Time 25 minutes
Total Time 28 minutes

Ingredients
  

  • 4 Cups Oats
  • 1 Cup Almonds
  • 1/4 Cup Chia Seeds
  • 1/2 tsp Salt
  • 1/2 Cup Melted Coconut Oil
  • 1/2 Cup Maple Syrup
  • 3/4 Cup Coconut Flakes Unsweetened is best
  • Dried Fruit (Optional) Add as much or little as looks good to you
  • 2 Tsp Vanilla
  • 1/2 Tsp Cinnamon
  • 1/4 Cup Wheat Germ
  • 1/3 Cup Flax Meal
  • 2 Egg Whites Optional

Instructions
 

  • Preheat oven to 350
  • Toss together oats, nuts, almonds, chia, salt, wheat germ, and flax.
  • In a separate bowl, mix the coconut oil, maple syrup, vanilla, and cinnamon
  • Pour the liquid mixture over the dry, and stir it up to coat
  • If you want a lumpier granola, beat two egg whites until frothy, then fold your mixture into the egg whites. If you like a smoother granola skip to the next step.
  • Spread the mixture on a parchment lined baking sheet. If you want clumpier granola you can smoosh together whatever size clumps you like.
  • Bake for 20 minutes
  • Sprinkle the coconut over the mixture and bake for an additional five minutes
  • Remove from the oven and leave on the pan to cool.
  • Store or freeze in an airtight container
