Preheat oven to 350
Toss together oats, nuts, almonds, chia, salt, wheat germ, and flax.
In a separate bowl, mix the coconut oil, maple syrup, vanilla, and cinnamon
Pour the liquid mixture over the dry, and stir it up to coat
If you want a lumpier granola, beat two egg whites until frothy, then fold your mixture into the egg whites. If you like a smoother granola skip to the next step.
Spread the mixture on a parchment lined baking sheet. If you want clumpier granola you can smoosh together whatever size clumps you like.
Bake for 20 minutes
Sprinkle the coconut over the mixture and bake for an additional five minutes
Remove from the oven and leave on the pan to cool.
Store or freeze in an airtight container
