Honey (No Sugar) Chocolate Chip Cookies

Ingredients
  

  • 1/2 Cup Butter at Room Temperature
  • 1/2 Cup Honey
  • 1 Small Egg
  • 1 Cup Sifted Flour
  • 1 Tsp Baking Powder
  • 1/4 Tsp Salt
  • 1/2 Tsp Vanilla Extract
  • 1/2 Cup Chocolate Chips of Choice

Equipment

  • Cookie Sheet
  • Parchment paper (optional)
  • Whisk
  • Hand Mixer, or Stand Mixer
  • 2 Mixing Bowls
  • Sifter
  • Measuring Cups
  • Measuring Spoons

Method
 

  1. Begin by creaming the honey with the butter until light and fluffy. Do this with a whisk, hand mixer, or stand mixer with the whisk attachment.
  2. Add in one egg and beat together well.
  3. In a separate bowl, sift the flour, baking powder, and salt together twice.
  4. Add the flour mixture to the honey/butter, incorporating a little at a time.
  5. Add the vanilla and chocolate chips, then stir to combine.
  6. For best results, chill the dough for at least one hour but preferably 2-4 hours or as much as 24.
  7. Line a baking sheet with parchment or grease it up with butter.
  8. Bake at 375 degrees F for 12 minutes, or until the edges are lightly browned.
  9. Best when dipped in milk. Makes about a dozen cookies
