Chocolate Waffle Cookies with Ganache Frosting

Ingredients
  

Cookie
  • 1 1/2 Cups Sugar
  • 1 Cup two sticks butter at room temperature
  • 4 Eggs at room temperature
  • 2 Tsp Vanilla
  • 2 Cups Flour
  • 1/2 Cup cocoa
  • Pinch of Salt
Frosting
  • 12 Oz Dark Chocolate Chips Or milk chocolate, your call!
  • 1 1/2 Cups of Cream
  • 1 tsp vanilla
  • Pinch of salt

Equipment

  • Waffle Iron
  • Three mixing Bowls
  • Rubber Spatulas
  • Wood Spoon
  • Measuring Cups
  • Measuring Spoons
  • Wire Rack
  • Electric mixer or whisk

Method
 

Cookie
  1. Begin by heating up your waffle iron.
  2. Combine the flour, cocoa, and salt in a small bowl. Set aside.
  3. Next, cream the butter and sugar together in a medium sized bowl.
  4. Next, stir in the eggs one at a time until each is well combined.
  5. Add the two tsp of vanilla.
  6. Add the dry ingredients slowly to the wet.
  7. Once you have a nice dough, it's time to start making waffles.
  8. Grease your waffle iron.
  9. Add one spoonful of dough to each quadrant of the waffle iron.
  10. Cook in the iron for around a minute and a half total.
  11. They will seem a little soft when they come out of the iron but should be cooked through.
  12. Once cooked, allow to cool on a wire rack.
  13. Once completely cool, frost and enjoy!
  14. Store in the open air or freeze.
Frosting
  1. Add 12 ounces of chocolate chips to a heat safe bowl.
  2. Heat 1 1/2 cups of cream on the stove until it gets bubbly.
  3. Pour the over top of the chocolate and give it a good stir.
  4. Let sit for a few minutes.
  5. Using a whisk or hand mixer, whip the cream and chocolate until it is completely combined.
  6. Cover with plastic wrap and allow to chill in the fridge for an hour or so.
  7. Remove from the fridge and mix with a hand mixer until you get a thick but spreadable frosting consistency.
  8. This ganache will keep in the fridge for up to a week or several weeks in the freezer.
