Cast Iron Einkorn Chocolate Chip Cookie

Delicious, quick to whip up, and makes minimal mess. It's almost too easy to make this giant cookie!

Ingredients
  

  • 6 Tablespoons unsalted butter room temperature
  • 3/4 Cup + 1 Tablespoon dark brown sugar
  • 1 Large egg
  • 1 Teaspoon vanilla
  • 1 Cup Einkorn Flour
  • 1/2 Tsp baking soda
  • 1 Tsp coarse salt divided
  • 3/4 Cup dark chocolate chips

  • Cast Iron Skillet (8 or 10 inch)

Method
 

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a bowl, mix 6 tablespoons of room temperature butter with 3/4 cup plus 1 Tablespoon of brown sugar. Rapidly stir in one egg, plus one teaspoon of vanilla.
  3. Add 1 Cup of Einkorn flour, 1/'2 tsp baking soda, and 1/2 tsp coarse salt. Stir until the dough is smooth.
  4. Mix in 3/4 cup dark chocolate chips.
  5. Grease a 8-10 inch cast iron skillet with butter or coconut oil.
  6. Spread the dough evenly in the cast iron skillet. Sprinkle remaining salt over the top.
  7. Bake 18-20 minutes.
