Cinnamon Oat Waffles

Equipment

  • Waffle Iron
  • Oil or cooking spray
  • Two mixing bowls
  • Spatula

Ingredients
  

  • 1 1/2 Cups Flour
  • 1 tsp Baking Powder
  • 1 tsp cinnamon
  • 2 Eggs
  • 1 1/2 Cups milk
  • 6 Tbsp butter
  • 2 Tbsp Brown Sugar
  • 1 Cup Oats - Quick or regular see notes

Instructions
 

  • Preheat your waffle iron. We have an old fashioned iron that you heat up on the stove so I start this process early.
  • Melt the butter in the microwave or stove. If you are using regular oats and not quick oats, pour the hot butter over the oats and stir.
  • The warm butter will help the oats to break down and cook more quickly. You can do the same steps with quick oats, or just mix them in with the dry ingredients. You will still need to melt the butter either way.
  • Add in the brown sugar
  • In a medium sized bowl, whisk together the flour, baking powder, and cinnamon.
  • Add the eggs o the butter/oat mixture, thoroughly stirring them in one at a time. Whisk in the milk.
  • Pour the wet ingredients into the dry and give it a good mix until you are lump free (minus the oats of course).
  • Use a basting brush to apply oil to the top and bottom of the waffle iron or spray them with cooking spray.
  • Take about a 3/4 scoop of batter and plop it in the iron. Cook until your iron tells you it is done, or if you've got an old fashioned situation give it a flip after about a minute and a half.
  • Serve warm and crunchy.
